Production Details Fresh Chardonnay pomace is distilled immediately after fermentation in a stainless-steel alembic. Distillation proceeds slowly at lower alcohol content; vapors pass through a distillation column, where the heads and tails are cautiously separated to retain the heart. The new distillate begins at 70–75° alcohol, after which distilled water is added before bottling to reach the label strength.
