Production Details Perpetuum I comes from Etna's northern valley at 600–800 metres above sea level. Grapes were destemmed and lightly crushed; fermentation began with a pied-de-cuve using only indigenous yeasts, with about 50 days of skin contact. Maturation took place in one neutral 7,000-litre epoxy tank for several years depending on the edition, followed by six months in bottle. The wine was not fined and was filtered before bottling through 5-micron polypropylene cartridges. Sulfur is reported as 25–50 mg/L, with addition or non-addition depending on grape quality and stability. The producer lists Piano dei Daini 2015, MunJebel classico 2016, Crasà 2017 and MunJebel classico 2019; Vinaiota additionally lists a Crasà 2016 component, so that parcel-level detail remains conflicting.
