Production Details Individual bunches were hand-selected and dried until January before pressing. The juice was placed over the previous wine’s sediment in small barrels, left untopped, sealed with wax and kept unopened for 10 years before final blending. The aging vessels were 100–120-liter oak and chestnut caratelli. Vines were 20–54 years old, trained to double arched cane, at a density of 3,000–6,000 vines per hectare.
