Production Details Vineyards are in the hills around Verona. The season had extensive April–June rainfall, less rain in July–August and favorable day–night temperature variation. Fresh-grape wine was refermented with 25% whole grapes of the same varieties, semi-dried for about six weeks; refermentation lasted about 15 days at 18–20°C, followed by completion of alcoholic fermentation and malolactic fermentation. Vinification of the semi-dried component began at the end of November. Maturation was at least 18 months in wood—two-thirds in 90-hL Slavonian oak casks and one-third in new Allier and Slavonian barrels—followed by three months in bottle. Recommended serving range is 16–18°C.
Tasting Notes Deep ruby with purple reflections; ripe and dried red fruit, vanilla and cinnamon; round and voluminous, with cherry, blueberry, vanilla and a persistent finish.
Food Pairing Pasta with rich meat or mushroom sauces; grilled or roasted red meat; game; aged cheeses.
