Vines were espalier-trained with spurred-cordon pruning at 5,050 plants/ha and cultivated under organic-agriculture and SOStain protocols. The ground cover comprised beans, vetch and wild plants; plant protection used minimal sulphur and copper, beneficial insects, mating disruption, kaolin and plant extracts. The grapes received three brief pump-overs daily, lasting 10–20 minutes according to fermentation stage. Fermentation lasted 7–8 days, initially at approximately 12–13°C and finishing at 24–25°C. Skin contact continued for 10–13 days after fermentation. Malolactic fermentation was completed in the same tanks between December and January; after racking, maturation began in 114 and 150 hL stainless-steel tanks. The sheet identifies the wine as certified organic and SOStain and also prints “10.1 B.” Its vintage note reports healthy, balanced, ripe and fresh grapes following a cool Vittoria summer.
Tasting Notes Pale ruby red with purple hues; orange marmalade, ripe strawberry, rosehip, candied violet and an elegant smoky tone; abundant red fruit and balsamic tones on the palate.
Food Pairing Red aperitifs, fried fish, meat and vegetable dishes, gourmet pizza, white cheeses, tuna, tartare and tomato-based dishes.

Vines were espalier-trained with spurred-cordon pruning at 5,050 plants/ha and cultivated under organic-agriculture and SOStain protocols. Ground cover comprised broad beans, vetch and spontaneous flora; plant protection used minimal sulphur and copper, beneficial insects, mating disruption, kaolin and plant extracts. The grapes received three brief pump-overs daily, lasting 10–20 minutes according to fermentation stage. Fermentation lasted 7–8 days, initially at approximately 12–13°C and finishing at 24–25°C. The sheet identifies the wine as certified organic and SOStain and also prints “10.1 B.” The Vittoria vintage note describes a highly aromatic, varietally expressive Frappato despite reduced regional production and an early growing season.
