Production Details Hand-picked fruit harvested at optimal ripeness undergoes spontaneous fermentation and 8–14 days of maceration. The wine matures for at least 18 months in never-new 25- or 35-hectolitre barrels, receives a small sulphur-dioxide addition at bottling without clarification or filtration, and remains in the cellar for another two months before release. Recommended serving temperature is 18–20°C.
Tasting Notes Bright ruby with purple reflections; wild berries, red and black fruit, undergrowth, dried flowers, subtle pungent spice and mountain coffee; fresh, enveloping and savory on the palate.
