Production Details Fermented with long skin maceration in buried Georgian amphorae using indigenous yeasts and no temperature control. After racking and pressing, the wine returned to amphora for a further 5 months, then matured for 6 years in large oak barrels. It was bottled without fining or filtration and aged for another 7 years in bottle before sale. The vintage had little rain and generally healthy fruit; the sheet also records a separately timed botrytised selection. Recommended serving temperature is 14–18°C.
Tasting Notes Deep gold; sage, rosemary, oregano, dried apricot, candied citrus, beeswax, fine spices, herbal and balsamic notes; powerful, structured and tannic.
