Production Details Selected bunches were placed on plastic trays and dried for four months in large open rooms with strong ventilated airflow. Pressing generally occurred in mid-January after another manual inspection of every bunch. Fermentation at approximately 28°C included automated punchdowns for around 15 days and a two-day final maceration. After racking, the wine rested for a few days in specially shaped stainless-steel tanks for decantation, then matured for 36 months in new barrels. Following barrel assembly and bulk filtration, it received further bottle ageing; release usually occurred seven years after harvest.
Tasting Notes Plum, black cherry, raspberry, chocolate and coffee; freshness supporting refined, sweet and elegant tannins; truffle, tobacco and new leather on the finish.
