Production Details Trellis training. Harvest was manual, but the sheet is internally inconsistent about timing: its technical line says the first week of September, while the vintage narrative says harvesting began in mid-September; consequently, no harvest-date claim is proposed. Fermentation occurred in stainless steel at 26–30°C for 8–10 days with frequent pumpovers, followed by malolactic fermentation in December and 4 months in stainless steel. Dry extract was 31.2 g/L. The season featured a mild winter, rainy and cool spring, a sudden summer heatwave, and milder September conditions with marked day-night temperature variation.
Tasting Notes Intense fruit; cherry, ripe plum and blackcurrant; violet and subtle herbal notes; soft, round palate; present but velvety tannins; lively acidity and freshness.
Food Pairing Grilled or roasted chicken, light red meats such as beef tenderloin, pasta with tomato or mushroom sauces, semi-aged cheeses, cured meats and assorted appetizers.
