Fifteen percent of the grapes dried for two months in a humidity-controlled loft, losing about 30% of their original weight. Fermentation occurred at 25–31°C in temperature-controlled stainless steel; natural malolactic fermentation followed in December. The wine matured for 11 months in large Slavonian-oak barrels.
Tasting Notes Ripe, sweet, plump cherry with fresher thyme and wild-mint notes; mature fruit, dynamic and sumptuous mouthfeel, and a gratifying vein of acidity
