Production Details Estate vineyards lie within the ancient monastery walls at 120–300 m, with vines aged 3–25 years and training by spur-pruned cordon, Guyot and Trentino pergolas. Spontaneous fermentation and 12–15 days of maceration take place in small concrete tanks with daily pump-overs and occasional délestage; malolactic fermentation follows in those tanks. Maturation lasts 12 months, divided equally between concrete and second-/third-use medium-toast French-oak barriques and tonneaux, followed by at least six months in bottle. Recommended serving temperature is 16–18°C. WineHunter classifies farming as organic and lists yield per hectare as 45 without specifying a unit; Vinmonopolet reports sugar below 3 g/L, compatible with WineHunter's exact 0.6 g/L result.
