Production Details Approximately eight months of skin maceration in Spanish clay tinajas are followed by maturation in used acacia barrels. The importer’s analytical panel is retained exactly as labelled: TS 0.28 g/L, TA 73.3 meq/L and SO2 0.23 g/L. The page does not expand TS or identify the SO2 fraction, while TA is expressed in meq/L rather than g/L; consequently these figures are not mapped to residual_sugar_gl, total_acidity_gl or sulfites_ppm. The producer’s vintage report separately records an estate-wide harvest of 26 August–2 October and average Fontanasanta production of 6,081 kg/ha, a site average not isolated to this wine.
Tasting Notes Candied orange, green apple, passion fruit, dried flowers, beeswax, white pepper and fennel; lemon peel, tropical fruit and herbal notes. Eric Guido’s Vinous note adds exotic flowers, tropical melon, spice, apricot, peach, green citrus, lemon curd and a precise mineral character.
