Production Details S.T. means Sboccatura Tardiva (late disgorgement). The vines are Guyot-trained at approximately 5,400 vines/ha in Castelnuovo Berardenga, northeast of Siena on the southern edge of the Chianti Classico production area. Grapes are harvested exclusively by hand into small crates, selected and gently pressed; the must is cold-settled, racked and fermented at controlled temperature. In spring, the wine is bottled with sugar and selected yeasts for its bottle secondary fermentation. It undergoes 120–122 months of bottle ageing before disgorgement and topping with liqueur d’expédition; the technical sheet additionally specifies at least three months of post-disgorgement ageing before release. No sugar is added at disgorgement.
Tasting Notes Bright straw yellow with golden highlights and very fine, persistent perlage; intense, fresh and complex, with floral, dried-fruit, pastry and croissant aromas; dry, savoury and balanced, with marked acidity, a long finish and candied-fruit notes.
Food Pairing Scallop carpaccio, shellfish, turbot and game birds.
