Pressing Method Gentle Pressing Following Skin Maceration In The Press
Production Details Grapes come from northeast of Siena in Castelnuovo Berardenga, at the southern boundary of the Chianti Classico production zone. Vine density is approximately 5,400 vines per hectare and vines are Guyot trained. Harvest is manual into small boxes. After selection, the grapes macerate on their skins in the press for 24–36 hours and are gently pressed. The must is cold-settled, racked and fermented at controlled temperature. In spring, the new wine is bottled with sugar and cultured yeast for secondary fermentation. Bottle fermentation and maturation last 20–22 months, followed by disgorgement and topping with liqueur d’expédition; the wine then receives at least three additional months of bottle aging before release.
Tasting Notes Antique rose with onion-skin and copper highlights; fine, persistent bubbles; delicate and fragrant, with wild berries, citrus and rose petals; dry, fresh and balanced, with refreshing acidity and a finish of redcurrant, sweet almond and wild berries.
