Production Details Grown northeast of Siena in Castelnuovo Berardenga, on the southern boundary of the Chianti Classico denomination, at approximately 5,400 vines per hectare and Guyot-trained. Grapes are harvested exclusively by hand into small boxes, quality-selected and gently pressed; the must is cold-settled, racked and fermented at controlled temperature. In spring, the new wine is bottled with sugar and cultured yeasts for secondary fermentation. Following 20–22 months of fermentation and maturation, it is disgorged and topped with liqueur d’expédition, then aged for at least another 3 months before release.
Tasting Notes Luminous straw yellow tending toward green, with a persistent stream of fine bubbles; delicate floral and fruit aromas, Golden Delicious apple and fresh-baked bread; dry, full-flavoured and balanced, with fresh acidity and a long finish suggesting tropical fruit.
