Tasting Notes Decanter: brambly fruit, violet, lavender and grilled herbs; plum, black cherry and blood orange; ripe and tangy, with a long, balanced, gastronomic finish and a soft, precise texture.

Production Details Destemmed, wild-yeast fermentation in tank, followed by six months in 450-liter amphorae on the skins and three to five months in concrete before racking and bottling. Residual sugar was below 1 g/L. Sulfur additions were 2–3 ppm at racking and 10–20 ppm at bottling. Certified-organic and dry-farmed estate vineyards were managed biodynamically without biodynamic certification and planted with winter cover crops. Fruit was hand-harvested and hand-sorted; production was 1,000 cases. Vineyard elevation was 650–850 feet. Recommended service was 58–62°F, with at least 30 minutes of decanting when young.
Tasting Notes Medium-bodied; mineral and sapid, with dark wild berries, purple flowers, spice, bright acidity and a complex finish.
Food Pairing White meats, veal, meatballs, mushrooms, tomato-based sauces, washed-rind cheese, seafood stews, octopus and salmon.
