Production Details Current specification: the wine is vinified in steel and receives at least 24 months on the lees. The current Liberty Wines NV specification says the grapes are hand-picked; Chardonnay and half the Pinot Nero are gently pneumatic-pressed and fermented as white wines in stainless steel, while the remaining Pinot Nero undergoes 10–15 hours of maceration before pressing and rosé fermentation. Malolactic fermentation precedes blending and bottling for secondary fermentation with Ferrari-selected yeast. Liberty reports vineyards at 350–750 metres and an acidity measurement of 6.9 g/L without stating the reference-acid basis; it describes dosage as normally 5–6 grams of sugar. Ferrari’s archived producer sheet instead specified sites at 300–600 metres and more than 36 months on the lees, indicating an older release specification that should not replace the current minimum-24-month specification.
Tasting Notes Elegant antique-pink appearance with fine, persistent perlage; broad, complex aromas of citrus, berries and peach; rich, enveloping palate with a persistent finish and delicate yeast notes.
