Production Details Chardonnay was harvested manually. First fermentation took place in large Austrian oak casks; part of the wine was also matured in oak before blending and bottling for second fermentation with Ferrari-selected yeasts. The importer describes at least seven years in bottle before disgorgement, and the producer recommends serving at 8–10°C. Current producer sources conflict on the minimum lees period for this vintage: the Italian PDF says 86 months, the producer-controlled shop says 80 months, and the official wine page says 69 months. No exact-day aging value is therefore proposed.
Tasting Notes Intensely golden with fine bubbles; smoky, tobacco, crème brûlée, vanilla, ripe apricot, jasmine and mango aromas; structured, dynamic and very persistent palate.
Food Pairing Suitable throughout a meal, including strong flavours such as anchovies and intense dishes such as ragù.
