Production Details The vines are inside the ancient monastery walls and trained on simple Trentino pergola. The current English producer shop sheet states 2,500 vines/ha, while the Italian producer technical sheet states 4,000 vines/ha; this unresolved producer-language-sheet conflict is preserved. Vines are described as 5–20 years old, at 120–150 m, with a grape yield of 80–90 quintals/ha. Grapes undergo soft pressing with minimal skin contact and white-wine fermentation for 10 days at controlled temperature, followed by six months in stainless steel; the Italian producer page specifies aging on the lees. Recommended service is 10–12°C.
Tasting Notes Pale onion-skin color; small red fruits and rose on the nose; pleasing, fresh palate with a savory note associated with the soils.
