Production Details Val di Cembra parcels at 600–700 m, with vines 10–30 years old, 6,000 vines/ha and an approximately 80-quintal/ha yield. The grapes underwent about 12 hours of cold skin maceration and gentle pressing, followed by low-temperature fermentation for 20–25 days. The wine then matured for 12 months on fine lees in 700-L first- and second-use French-oak tonneaux. Recommended serving range on this exact-vintage page is 7–10°C. The 2021 season is described as having a mild, rainy winter; spring frosts that spared the high-altitude vineyards; wet June and July; instability from mid-July to mid-August; and beneficial late-August rain.
