Production Details The vines are situated within the ancient monastery walls. Spur-pruned cordon and Guyot plantings have 5,100 vines/ha, double Trentino pergola 1,800 vines/ha, and simple Trentino pergola 2,500 vines/ha. Vine age is 15–40 years and altitude 120–300 m. Reported grape yields are 50–60 quintals/ha for cordon and Guyot and 80–90 quintals/ha for double and simple Trentino pergola. Spontaneous fermentation and 12–15 days of maceration took place in small concrete vats with several daily pump-overs and occasional délestage. After racking, malolactic fermentation occurred in the same vats, followed by several months of settling. The wine then aged for 18 months in medium-toast, first- and second-use French-oak tonneaux, was blended and bottled, and remained in the producer's cellar for at least another 18 months before release. The 2020 season had 150 mm of precipitation in its first four months; late September was mostly dry and sunny.
