Production Details The 2021 wine came from alberello- and Guyot-trained vines in the oldest parcel of Olmo. Grapes were handpicked at full ripeness, selected in the vineyard and again at the winery before destemming, softly pressed and fermented in open-top barriques. Spontaneous indigenous-yeast fermentation involved 4–5 manual punch-downs per day at its peak, decreasing to two gentle punch-downs to keep the cap wet. The wine was transferred to old barriques up to 20 years old for malolactic fermentation and aged for approximately two years before bottling. The west-facing site reaches up to 450 m, and the vines were 25–50 years old.
Tasting Notes Ruby red; red-fruit aromas with intense pepper; elegant, fresh palate with supporting acidity
Food Pairing Structured savory dishes, especially red meats
