Production Details The grapes undergo a long maceration of around one month. After fermentation, the finished wine is aged in used oak barrels for 2–3 years and refined in bottle for at least one year, generally much longer.
Tasting Notes Red-brick colour; fresh dark fruit, iron-like minerality and gamey or meaty notes; red stewed fruit develops into earthy and animal notes, ending with white pepper. Light-bodied with slight creaminess, fine tannins and bright acidity.

Production Details A late harvest followed a long, dry autumn.
Tasting Notes Deep ruby with a garnet rim; black cherry, blackberry, ripe plum, dried violet, tobacco, dark chocolate, graphite and fine spice. Firm tannins, lively acidity and a long balsamic, mineral-spiced finish.
Food Pairing Wild-boar ragù, dark meat, robust game, grilled dishes and mature cheese.
