Production Details Nero d’Avola from the named Ulmo Vecchio and Vruca vineyards was harvested by hand into backpacks and immediately transported to the Ulmo winery. After crushing and destemming, alcoholic fermentation lasted 8 days in stainless steel, with 2–3 short pump-overs daily lasting 12–18 minutes; temperatures progressed from approximately 14–15°C to 18–21°C and finally 24–25°C. This was followed by 10–12 days of submerged-cap skin maceration at approximately 21–23°C. Malolactic fermentation occurred entirely in steel; the wine was then racked off its lees and matured for 10 months in third- and fourth-use French Allier oak barriques and tonneaux. Ulmo is at 195 m and yielded 80 quintals/ha; Dispensa is at 75 m and yielded 70 quintals/ha. The sites use spurred-cordon-trained espalier, with 4,545 vines/ha at Ulmo and 5,050 vines/ha at Dispensa. The sheet identifies the wine as certified organic and SOStain® and describes organic ground cover and minimal sulfur and copper vineyard treatments.
Certifications SOStain®
