Production Details Fruit comes from a 9-hectare Contrada Samperi vineyard planted more than 30 years ago at 3,500 vines/ha and trained to single Guyot. The reported yield is 6 t/ha. Clusters are cooled and selected before pressing; must settles naturally. Fermentation is temperature-controlled, with 20% continuing in French oak, using wild yeast and minimal sulfites. At tirage, fresh Grillo must from the same vineyard is used instead of sugar; the must contribution does not exceed 15%. The wine then remains at least 18 months in bottle on lees. The producer shop recommends serving at 6–8°C.

Production Details The 9-hectare Contrada Samperi vineyard was 30 years old, planted at 3,500 vines/ha and Guyot-trained; reported yield was 60 q/ha. Grapes were cooled and bunch-selected, and the must settled spontaneously. Fermentation continued in French oak for 20% of the grapes, with minimal sulfite use. Half of the base wine matured for 12 months in steel and the other half in French-oak vessels on its lees. Tirage used fresh must from next-vintage Grillo grown in the same vineyard, with the must contribution not exceeding 15%. Bottle lees ageing lasted at least 18 months. The sheet reports reducing sugars below 1 g/L and acidity of 6.80 g/L without stating the acidity basis.
