Production Details The western-Sicily vineyard is trellised and Guyot-pruned. Grapes are harvested manually during the first ten days of September; part of the bunches is sun-dried on racks, while the remainder is softly pressed and fermented at controlled temperature. The dried grapes are then added to the fermented wine and macerated before pressing. The resulting wine returns to steel for a few weeks before bottling; the sheet does not give an exact maceration duration or an exact number of maturation days.
Tasting Notes Deep gold; dried apricot, honey, candied cedar fruit and black-tea-leaf aromas; full, vibrant and fresh on the palate, with candied orange and honey and a persistent, long finish
Food Pairing Mature cheeses, fig tart and custard-based desserts
