Production Details Ravera (Novello) fruit came from parcels in the southern amphitheater at 300–380 metres above sea level. The grapes were manually sorted in three stages: on the vine, as whole clusters on sorting tables, and as individual berries after destemming. Vinification used gentle punch-downs and pump-overs in custom-designed vertical tanks, followed by a 47-day submerged-cap maceration and spontaneous malolactic fermentation in stainless steel the following spring. Maturation lasted 22 months in large 25- and 50-hectolitre Slavonian casks. The vineyards are described as sustainable and organic certified, although the sheet does not name the certifying body.
Tasting Notes Dark cherry, blood orange, marzipan, star anise, cedarwood, purple flowers, tobacco leaf, earth, iron, wet clay, licorice, red and dark fruits, sweet spice, aromatic herbs and saline minerality; deep and powerful, with broad finely woven tannins and a persistent savory finish.
