The wine normally matures for five years before release in large neutral French botti that are steam-formed rather than toasted. Polaner's technical field describes vines aged 25–50 years, while its embedded Wine Advocate review says 35–60 years, so no single canonical vine-age value is proposed.
Tasting Notes Wine Advocate: sweet cherry, dried blueberry, lavender and red mint; finely etched, lean, elegant, composed and precise. Vinous: powerful and tightly wound, with dried herbs, incense, licorice, tobacco and crushed autumn leaves; insistent but polished tannins.

Production Details Roagna's official page describes manual harvesting into small boxes, two manual selections, about 10 days of wooden-vat fermentation, 60–70 days of submerged-cap maceration and about five years in neutral oak and concrete. The exact-vintage Liber sheet reports about five years in large neutral French botti and production below 1,250 cases. The exact-vintage Unico page differs by reporting about 80 days of skin contact and about four years in used botti followed by about six months in concrete. Unico also reports sugar below 3 g/L and “acid 0.57 g/L” without identifying the acid basis; these observations are retained here rather than promoted to exact residual-sugar or total-acidity fields.
Tasting Notes Vinous: powerful, deep, closed and energetic, with pine, menthol, licorice and dried herbs. Wine Spectator: white pepper, strawberry, sour cherry, mint, menthol and iron, with balance, complexity and length.
Food Pairing Lamb and mutton; small game and poultry; large game; mushrooms; rich pasta; mature Parmesan
