Production Details The approximately one-hectare vineyard is farmed under practicing-organic methods and was hand harvested. Whole grapes arrive in small crates and macerate briefly in the press; after pressing, the must is deliberately browned without added sulfites and fermented with an indigenous-yeast pied de cuve. The wine ages on its lees for two years in one large French-oak cask. Wine Spectator reported 218 cases made.
Tasting Notes Vinous (92): lemon confit, marzipan, white flowers and herbs, with floral overtones and silky, creamy contours. Wine Spectator (90): malt, honey, earth, bitter grapefruit and peach, with tangy acidity, salinity and a long mineral finish.
