Fermentation Vessels Bottle for traditional-method secondary fermentation

Production Details Traditional-method Blanc de Noirs made from Oltrepò Pavese Pinot Nero, with vinification and maturation at Neive. The vendor asserts six years on lees, but that duration is chronologically incompatible with its own 2022 harvest designation as of September 2026; the duration is therefore preserved as an unresolved source assertion and not converted into an ageing-days claim. Recommended serving temperature is 6–8°C.
Tasting Notes Straw yellow; fine, persistent perlage with quickly dissipating foam; fruit, yeast, bread crust and biscuit; dry, full, soft and velvety
Food Pairing Fish carpaccio, vegetarian dishes, cheeses and white fish

Production Details The retailer describes traditional bottle fermentation followed by 30 months on lees before disgorgement. The approximate dosage is retained here rather than emitted as an exact dosage claim, and the differently scoped lees durations are not collapsed into one numeric value.
Tasting Notes Heiner Lobenberg: pear, stone fruit, white fruit blossom, mineral precision, wild strawberry, creamy brioche and fine perlage. Reproduced James Suckling note: almond paste, bread dough, light strawberry, minerals and flint, with fine bubbles and a dry, crisp finish.
