Production Details Hand-picked clusters are destemmed and traditionally pressed, followed by spontaneous fermentation in large vats and 60–70 days of skin contact with manual cap management. The Unico release page describes approximately 4.5 years in large used botti and bottling without fining or filtration; it also reports sugar below 3 g/L and “acidity” of 0.57 g/L without identifying the analytical basis. The Liber technical sheet describes ten days of fermentation, 60–70 days of submerged-cap maceration and normally about five years in large neutral French botti before release. The sheet gives a normal ceiling below 825 cases, while its Wine Spectator review reports 491 cases for 2019.
Tasting Notes Vinous: dark-toned fruit, deep spice, leather, incense, licorice and scorched earth, with notable texture. Wine Spectator: cherry, raspberry, alpine herbs, mineral and anise, fine-grained tannins and vivid acidity.

Production Details The producer describes manual harvest into small crates, two manual selections, approximately ten days of fermentation in wooden vats using an indigenous-yeast pied de cuvée, 60–70 days of submerged-cap maceration, and approximately five years in neutral oak vats and cement. The exact 2018 specialist product record reports sugar below 3 g/L and “acid” of 5.3 g/L but does not state the analytical basis, so neither observation is promoted to an exact canonical residual-sugar or total-acidity value.
