Production Details The 1.83-hectare Pajé parcel supplies an old-vine selection. Fermentation lasts ten days in large wood casks with a pied de cuvée made from indigenous yeasts, followed by submerged-cap maceration lasting 70–90 days. Maturation is in large neutral French botti; the untoasted oak is shaped with hot steam rather than flame, and the wine is normally aged in wood for five years before release.
Tasting Notes For the 2019 release, Vinous describes a wild, exotic, perfumed dark-fruit profile that is ethereal and deceptively medium-bodied, combining old-vine gravitas with lightness. Wine Spectator identifies cherry, raspberry, pomegranate, mineral and licorice flavors, lively acidity, and dense yet refined tannins.
