Grapes were hand-harvested into crates, chilled overnight at about 8–10°C, hand-selected, destemmed and pressed. The must remained at about 7–8°C for 3–4 days; the clear portion was decanted and fermented at about 15°C. The sheet gives both 20–25 days and about 10 days for fermentation, so its duration is internally inconsistent. The wine was then racked and held on fine lees with weekly stirring. The prose says bottling occurred in February after about four months, while the explicit BOTTLING field states December 2025.
