Production Details Vines are reported as 15–20 years old. Grapes are harvested manually into crates, destemmed and crushed, then cold-macerated for 12 hours. The must is pressed and statically clarified for 48 hours at approximately 8°C. Fermentation takes place in stainless steel and is stopped using cold. Bottlings occur in November and at the end of February, with an optional third bottling in April.
Tasting Notes Intense yellow color; fragrant and aromatic, with light notes of mandarin, grapefruit, white peach, flowers and sage; fresh, sweet and aromatic on the palate.
Food Pairing Traditional Italian desserts; moderately aged cheeses; salami and figs; aperitif; grilled prawns.
