Production Details Fruit came from Guyot-trained vineyards at Sansonina in Peschiera del Garda, planted at 3,500 vines/ha; a significant portion of the vines was over 50 years old, and the stated yield was 80 quintals/ha. The wine underwent artisanal spontaneous fermentation without selected yeast, followed by sur-lies maturation predominantly in steel, with approximately 10% matured in new barriques. They were submerged in the southern Venetian Lagoon in December 2023, secured with nautical rope in groups of six at a depth of 6–8 metres, and recovered in April 2025. The dedicated maturation section and Zenato wine page state 16 months underwater; one tasting-note sentence in the same technical sheet inconsistently says 12 months.
Tasting Notes Brilliant colour with golden reflections; a complex, saline nose combining ripe fruit, aromatic herbs and marine notes; broad, soft and vibrant on the palate with pronounced savouriness; long, mineral and refined finish.
