Production Details Whole grapes are cooled for about 12 hours at controlled temperature, then destemmed and the whole berries pressed; static settling is at 10°C, followed by racking and alcoholic fermentation. The wine rests on fine lees for about 6 months, is bottled between April and May, and matures in bottle for about 2 years before release.
Tasting Notes Citrus and tropical fruit, light hydrocarbon and mineral notes; ripe but lively fruit on the palate with minerality, savouriness, and a soft finish.
Food Pairing Starters, pasta and other first courses, vegetable risottos, vegetarian dishes, and cheeses.
