Production Details Fruit was hand-picked in the early hours of the day. The vineyards lie between 280 and 550 meters above sea level. A long, gentle maceration was used; fermentation lasted up to 20–25 days and was followed by spontaneous malolactic fermentation. The wine then spent approximately four months in stainless-steel tanks before bottling. The estate is certified organic, although the sheet does not name the organic-certification body.
