Production Details The hillside parcel measured 0.12 ha and produced 1,066 750-mL bottles. Grapes were fully destemmed; fermentation at 29°C used a traditional semi-submerged cap with punch-downs and pump-overs. The wine aged nine months in steel tanks and at least three months in bottle before release. Finished-wine analysis also reported total dry extract 22.2 g/L, total extract 23.2 g/L and total sulfur 80 mg/L. The producer suggests serving it cool at 12–15°C.
Tasting Notes Very light color; medium-bodied, fresh and mineral, with evident fruit, restrained tannins, and emerging spicy and floral notes.
Food Pairing Prosciutto, salami, lardo, Alba beef tartare, vitello tonnato, pasta, simple red-meat dishes, seasoned cheeses, delicate white meats or fish.
