Production Details Grapes were hand-picked into coded small crates, cold-stored, individually selected, washed in three soaking tanks and thoroughly dried. The grape yield was 4,800 kg/ha, producing 1,850 L/ha of wine at a stated 38% yield. Base wines remained on their own lees in oak for six months while undergoing malolactic fermentation; wine from the best barrels among 31 base wines was gravity-transferred for blending. Maturation sur lies lasted 8 years and 7 months. Disgorgement occurred without oxygen through the producer's patented system and without additional sulfites. Volatile acidity at disgorgement was 0.26 g/L and total sulfur dioxide was below 53 mg/L. Bottles were individually marked for traceability.
