Production Details Grapes were hand-picked into small crates, tracked to their vineyards, chilled and bunch-selected. After soft pressing, the must fermented in small oak casks and remained in oak for five months; it was then gravity-transferred to cellaring tanks, and the base wines were assembled seven months after harvest. The sheet describes 8–12 years on the lees as the quality target and records average lees contact of 13 years 4 months before “bottling” (its wording). Disgorgement was oxygen-free, avoiding extra sulfite additions, and each bottle was marked for traceability.
