2019 Technical Specifications

Grape Varieties 100% Sauvignon
Classification Friuli Colli Orientali DOC
Region Friuli Colli Orientali
Fermentation Vessels 15-hectolitre casks toward the end of alcoholic fermentation
Barrel Size 15
Production Details A mass selection with medium-sized, fairly sparse bunches was planted near Strada del Sole in 1975. Grapes were hand-picked into small crates, destemmed and skin-macerated for a few hours. The wine was racked into 15-hL casks toward the end of alcoholic fermentation; malolactic fermentation took place over one month, followed by maturation on yeasts and barrel ageing. The one-month duration is retained as text because the source does not give an exact number of days.
Tasting Notes Boxwood, jasmine, sage, tropical fruit, gunflint, citrus, petrichor, gooseberry, elderflower and sweet balsamic notes; tangy, balanced acidity, firm texture, mineral finish.
Food Pairing Green or spicy dishes, including tuna tacos with avocado and wasabi, amberjack carpaccio, herb-driven pasta or risotto, prawns and fresh cheeses.
