Production Details After the late-October harvest and selection, fermentation was spontaneous with indigenous yeasts and no temperature control. Maceration lasted at least 60 days and up to 90 days, with the cap kept submerged in 42 hL truncated-conical oak vats. The wine then matured for 18 months in 42 hL oak vats, undergoing spontaneous malolactic fermentation, followed by 12 months in bottle.
Tasting Notes Francesco Pensovecchio, Wine in Sicily (16 April 2025), described the 2020 as bright violet-ruby, with black berries, plum, dried roses, candied citrus and menthol notes; broad, fleshy and elegant, with minerality and a long, lightly savory finish.
