Production Details Fruit came from ungrafted vines on volcanic soils at 920–1,000 m. Grapes were destemmed and lightly crushed, received four days of initial skin contact, and fermented spontaneously in neutral fiberglass tanks. The wine rested on its lees in tank for 18 months and was then given a further 18 months in bottle. It was bottled without fining but with light filtration. Vin & Natur reports SO2 as 15–50 mg/L, either added or not; this range is not treated as a single finished-wine sulfites value. XtraWine recommends serving at 10–12°C.
