Production Details Uncertified organic fruit from vines more than 40 years old was grown at 620–750 m. Grapes were destemmed and lightly crushed, followed by three days of pre-maceration and pneumatic pressing. The wine fermented spontaneously in neutral fiberglass tanks, remained on its lees in tank for 16 months, and was bottled during January–February 2025 without fining and with light filtration. Reported SO2 was 15–50 mg/L and could be added or not depending on grape quality and wine stability.

Production Details Fruit came from the northern Etna vineyards Calderara, Borriglione, Crasà and Picciolo, from vines more than 40 years old. After four days of skin maceration with indigenous yeasts, the wine matured for 16 months in neutral fiberglass tanks of 2,500–5,000 liters. It was not fined and was filtered before bottling through 1-micron PP cartridges.
