The clusters were destemmed above the vat so berries entered by gravity. Skin contact lasted 21 days for Merlot, Carménère and Cabernet Franc and 22 days for Cabernet Sauvignon, with temperature control, punch-downs and daily gravity-fed pump-overs. Warm wine was transferred to small oak barrels; after mid-winter malolactic fermentation, lots were blended and aged in oak and stainless steel for approximately 23 months. Gravity bottling used long-nozzle fillers, with no sulphites added at that stage, followed by at least four months in bottle. At bottling, volatile acidity was 0.41 g/L and total sulphur dioxide was below 66 mg/L.
