Production Details The grapes were manually sorted three times: on the vine, as whole clusters on sorting tables, and as individual berries after destemming. Vinification used gentle punch-downs and pump-overs, followed by 47 days of submerged-cap maceration. Spontaneous malolactic fermentation occurred in stainless steel the following spring, and the wine aged for 22 months in 25 hL large Slavonian-oak casks.
