Production Details For the 1 L 2015 release, low-yield Pinot Noir was hand-picked at suitable ripeness and macerated with its skins for one month. The wine then matured for five to eight years in used barriques and at least two years in bottle.
Tasting Notes Black cherry, plum, dried rose, black pepper and smoky aromas; abundant but smooth tannins, with savory, mineral and spicy notes continuing through the finish.
Food Pairing Roast duck breast with black-cherry sauce; roast veal with mushroom jus; wild-boar ragù with pappardelle; black-truffle risotto; aged Taleggio.

Production Details For the 50 cL 2009 release, grapes were manually harvested into crates, destemmed and crushed, then spontaneously fermented with approximately three to four months of skin maceration in truncated-conical oak vats and three to four manual punch-downs through the end of fermentation. After drawing off, the wine spent approximately five years in used oak barriques, with rackings if necessary, followed by five years in bottle.
