Production Details Grapes were harvested by hand into crates and destemmed. Fermentation took place on the skins in oak vats without temperature control or selected yeast, with three to four manual punchdowns per day. After separation from the skins, the wine rested for approximately four years in 25–35 hL oak barrels, with rackings only when necessary.
