Each variety fermented separately at 30–33°C with manual pumpovers; cuvaison lasted 26 days for Sangiovese and 24 days for Malvasia Nera. Malolactic fermentation occurred in barriques, followed by maturation in fine-grained oak barriques, 40% new and the remainder one-year-old. Finished-wine residual sugar was <0.5 g/L and extract was 30.9 g/L. The sheet's blend table names only Sangiovese and Malvasia Nera, while its refinement text anomalously refers to assembling “three varieties”; no third variety is identified.
