Production Details The 2021 vendor description reports selected grapes, approximately one week of skin maceration, fermentation at 20–25°C, retention in stainless steel and several months in French-oak barrels before youthful bottling. It also lists acidity as 5.5 g/L without identifying the analytical acid basis.
Tasting Notes Dark cherry-red; cherry, sour cherry, violet, cinnamon and vanilla; balanced, with a pleasant cherry note. A second 2021 description adds ripe red berries, pepper, plum, cocoa, toast, rounded texture and soft oak tannins.
Food Pairing Soups, pasta, white meat and light main courses, especially Mediterranean cuisine.
